Beer led us to Kveik yeast from Norway. And when we developed a beer with them, all the pieces of the puzzle fell into place: in the north, some traditional beer styles are brewed using juniper branches—and juniper happens to be a key ingredient in Hasselt jenever. We were even allowed to harvest the juniper branches from the courtyard of the Jenever Museum—we were delighted! And you ?
