Springfield 's Wild Yeast is a full-bodied, highly distinctive, and pure Chardonnay with aromas of mandarin oranges and exotic fruit. This is a very natural wine, not aged in barrels. It's a delicious, complex style with considerable depth of flavor. This Chardonnay is sourced from old vines over 20 years old, giving the grapes increased aromatic power. Thanks to the dry summers, the grapes remain in excellent health, allowing this Chardonnay to ferment exclusively with wild yeast cells, without the addition of any foreign yeast.
